Is Evolution Science?

While working on my PhD in statistics, a PhD paleotologist was asking me about hierarchical cluster ysis as a method of clifying animals. I asked what their current method of determination was, and was very disillusioned when he said "educated guess". So basically you have "scientists" talking about evolution being fact based off of the summation of educated guesses. In the science that I do, I have tightly controlled experiments and still only talk about the probability of something being true. Now understand that I do not support creationism being taught in science as it is in no way falsifiable. What I am wondering, however, is why these people are claiming to be scientists, when they do not act in accordance with my understanding of science and the scientific method.
